No Noodle Lasagna. Worth every bit of work!!

Hi guys and gals, as you may or may not know, my website has gone as gluten free, grain free, bread free, pasta free and processed food free as possible. This has been a battle over the last 3 and a half months but if you read my article mentioning losing 30 lbs in 3 months then you can understand why I’ve been dedicated to this system. (Paleo or Caveman diets)
Below is a recipe that I have found on a few various gluten free and Paleo lifestyle websites. This is a noodle free lasagna, ya that’s right, no noodle!!. I’ve used Eggplant, Parsnip and Zucchini in place of the noodles AND WOW did this come out 110%. Even my buddy who was watching me make this and can’t seem to buy into the lifestyle I am following, said it blew his mind on how it all came together and the taste he mentioned was phenomenal!!

Braised Beef Shanks with pasta.

One morning as I was making coffee and breakfast and as always watching the food network, I noticed that one of my favorite chefs Michael Smith was making a great dish with something I have never used before. He was making Braised Beef Shank and it looked absolutely amazing. After watching for a few minutes and taking a couple notes, my first stop was the grocery store. The funny thing is that as I placed my order for two Beef Shanks at the butcher counter, a lady came up behind me and proceeded to order the same thing. I then glanced into her basket and she had all the same ingredients as me. I couldn’t help but laugh because obviously we had just watched the same show.

Crispy Trout and Corn salad with sweet potatoes.

So here are two things that I have never made before. actually I have never even ordered a fish cooked in this style, so I really had my fingers crossed on this one. The salad that I prepared as a side was also new, this wasn’t a recipe I found in any cookbook but I am not saying I invented it. It just kind of happened. Right now in Toronto the weather is extremley hot and I was looking for something refreshing to go with the fish and sweet potatoes.

A dinner party war??? This would win it for ya.

I have been walking by this cut of pork tons of times while doing my shop. Why??? Im not really sure. However, this time I decided to pick one up. The cut of pork I am referring to would be pork loin center cut Frenched. Frenched is the term used when cleaning and showing about 1.5 – 2 inches of exposed bone as part of the presentation, plus it makes a great handle for chowing down.
