This morning I was inspired by a post I read on a website asking about meal ides and especially breakfast. This will be a quick post based on a quick easy meal I threw together this morning.
To start this off I have some Bison sausage, eggs, Parsnip, Zucchini, Sweet Onion, and green onion. Start off by grating the parsnip, zucchini and onion in to a bowl and chop the green onion and throw that in aswell. Now give tis all a good mix so that its well blended.
Crack that egg in there and give it a mix aswell. Add some salt and pepper for taste and this is where its completely your call, I added some paprika and cumin to my mixture just to kick it up a bit. Pretty much just add a dash of each. leave this all in the bowl for about 10 minutes to set up.
When making your veggie pancakes you will want to scope a handful out of the bowl and squeeze out some of the water. Make sure your pan is on a medium heat and has some coconut oil in it preheating aswell. Place a pancake in the pan and use a spatula to form it in to a circle, square, dinosaur whatever you like. Let that cook for about 5 minutes per side. You will want a lid to keep some moisture in so they don’t burn. but if the heat is appropriate they should be just fine.
The Bison sausage was fairly easy to cook. Pan on medium high heat. let them sear for a minute and then cover with a lid to ensure they cook evenly. They will take about 10 minutes. Bison Sausage is amazing and is literally the best type of sausage I have ever eaten in my life. Ya I said it!! the best!!
So the basis of this post is to show that you can make anything out of anything in your fridge. not only will the meal turn out great and healthy but you’ll get that “allright, I did it” feeling when your done.
