Beef Ribs are good for the soul.

Here is one of the easiest beef rib recipes ever. I love me some beef ribs and I could eat mountains of them and if you try these bad boys I’m sure you would do the same.

So this wont be a long post, they are that easy. Go down to your local butcher and pick up a few pounds of the ribs and get’em home. Unwrap them and remove the silver skin from the back. The two tools that you need for this are a butter knife and paper towel. The paper towel makes it easier to grab the slimy silver skin when trying to remove it.

Pre-heat your oven to 275F and lay your ribs out on a backing sheet. Dry them off on both sides and prepare your rub.
Rub consists of: 1 Tbls Garlic powder, 1 Tbls onion powder, 1 Tsp paprika, salt and pepper. Mix this in a small bowl. Apply generously to both sides of the racks and apply some olive oil and rub it in. Slide them in the oven and just leave them in there for 2.5 to 3 hours untouched. You don’t need to fuss with these by lathering them up with bastes or anything more then what you did in the beginning. At the end all you will do is add some maple syrup or a bbq sauce of your choice. I went with just a drizzle of maple syrup and that just gave them a great finish taste that makes you think of home and good times.

For the sides on this dish I made spaghetti squash and some asparagus. Both are easy and taste great. Spaghetti squash only takes like 10-14 minutes in a microwave or 20 minutes @ 350F in the oven. Cut it in half length ways, clean out the seeds and stringy center. Add some salt and pepper and a light coating of Olive Oil. Place cut side down on a baking sheet or plate and that’s it. When it’s cooked use a fork to shred the inside out of the shell. Cut the bottoms off of the Asparagus and then cut them into pieces about an inch and a half long. Put them in a bowl and toss with Olive oil, salt and pepper and Garlic powder and some pre cooked bacon cut into small pieces. Make sure everything is coated and then bring a frying pan up to medium high heat. Add a bit of coconut oil or olive oil and throw the asparagus in and fry until tender. If you char it a bit, that’s a good thing. This will add a nice nutty flavor to the asparagus. Honestly you could eat the asparagus raw when coated in these flavours. Really tasty.
