I have been walking by this cut of pork tons of times while doing my shop. Why??? Im not really sure. However, this time I decided to pick one up. The cut of pork I am referring to would be pork loin center cut Frenched. Frenched is the term used when cleaning and showing about 1.5 – 2 inches of exposed bone as part of the presentation, plus it makes a great handle for chowing down.
